            <description><![CDATA[ I have purchased horseradish from your web site for the past 3 – 4 years.  Every year I purchase 4 roots and have started a harvest rotation and this I will purchase more.  So my question is how do I get it so hot I that I can barely eat it?  I like very hot, but every year when I process it I just can not get it as hot as I like.  When processing in a blender it will burn my eyes, but when I taste it, it is just not hot enough.  Everything I read says that it is based on the time when you add the vinegar.  Seems most people are trying to simmer it down, but I want it hotter.  Once again this year I added the vinegar 6-8 minutes after grinding it in a blender with cold water and few ice cubes.  But this was not any hotter than when I added vinegar immediately.  Does the type of root make a difference?<br />

            <description><![CDATA[ Hello all, my first post here...<br />

I discovered growing horseradish a few years ago when a client wanted me to dig out a patch that was growing in the middle of their lawn.. wow what a job LOL.<br />
So of course I harvested it all, planted some at my house and processed the rest.... THE BEST horseradish I HAVE EVER HAD!!!!!<br />
<br />
So after some investigating I found out that this horseradish came from a local patch that is over 100 years old. I'm in Quebec and wondering if anybody can tell me what origin it could or would be being that old... I'll get some pictures if that will help.<br />
<br />
It is a super strong plant and flowers without fail every year and according to freinds and family it is the hottest they have ever had... though most have been eating store bought for far too many years haha.... It is a very hot one though.<br />

            <description><![CDATA[ Good Day. I have just harvested my horseradish plant and will never have to buy again. The weight of the root that I harvested paid for the investment in the seed root that I purchased this spring. I have 4 roots to replant for next years crop. Thank you very much for a very informative website that led me to a sucessful harvest. I live in Russell Twp, Geauga County, about 1/2 hour north of your facility. My question is - Should I replant the roots now for next year for a larger harvest? I grow in raised beds in an area of my yard that is moist, not wet, most of the growing season. ]]></description>

I live in Fairbanks, Alaska where it gets -50 and let me assure you that horseradish grows like crazy here. It is definitely a perennial!  In fact, I am afraid it is becoming rather &quot;weedy&quot; in my box garden and I am having to aggressively cut the runners and give them to friends.]]></description>

            <description><![CDATA[ I am the new proud owner of Bert's beauties, that I just planted, and beg to grow fast daily.  I would like to share some of my recipes with everyone, and since there are several, I'll just type the info, instead of &quot;recipe&quot; format we all know.  The horseradish amount is mine, so you might adjust it to your tastes.  ONE: 1/2c plain yogurt, 2 tbsp horseradish, 2 tbsp. orange juice.  s/p to taste (salt and pepper), 1/2 tsp. sugar.   TWO: 1 cup applesauce, 1/3 cup horseradish, 1 cup mayo, 1 cup whipping cream, whipped.  Whip cream, mix other ingredients, and fold into cream.   THREE: 1 cup coarse chopped horseradish, 1 tbsp. brown sugar, s/p to taste, 1/3 cup cream, 1/4 cup vinegar, 2 tbsp prepared mustard.  Combine all ingredients and blend in blender thoroughly.   FOUR: 4 tart apples (peel, core,quarter), 1/2 c. water, 2 tbsp lemon juice, 1 vanilla bean, split, 1 cinnamon stick, 1/2 c. sugar, 4 tbsp. horseradish.  Combine all except horseradish, cook till apples tender, remove bean and cinnamon.  Puree, add horseradish.  Chill.<br />

Then covered the area with black cloth and a whole bunch of bark.  Every so often the bark and the black cloth are moved up and there are a bunch  of little horse radish plants growing.             <description><![CDATA[ I have been harvesting horseradish roots over the course of two years. The first two times in the fall after the tops died back. Following that, I tried harvesting over the course of the rest of the year- Spring, Summer and Winter as well. I dug, washed, peeled, grated and added vinegar just like I've done since my mother showed me over 50 years ago. It always comes up the same--it tastes liike dirt.<br />
<br />
These are plants from rootstock from my father's house. He said they were there when he moved in and he had never used them. When he died, I brought some home.  They look like horseradish, they smell like horseradish, although the fumes are mild enough to peel and process indoors, and the roots and leaves taste like very mild horseradish.<br />
<br />
Is there a horseradish look-alike? Is there a soil condition I need to know about? Anything? These plants take up a lot of room and they spread like horseradish. I need to solve the problem or dig them out.<br />
<br />
If you have any suggestions, please let me know.<br />

            <description><![CDATA[ Just got done processing the crop for this year.  We didn't attack it as vigorously as in past years due to a really wet fall and some pretty saturated soil.  I left alot of plants in to get larger for next year.<br />
We processed over 60 pint jars and froze them as usual.  It's amazing how the roots and plants develop in just one year.<br />
For new growers of horseradish, after you get the roots established, don't worry, you'll never depleat it totally by a vigourous digging.  I was also driving around our countryside and noticed some growing in the roadside ditch.  I may have to go back and dig some of that up and see if it is similar to our roots.]]></description>

I'm a first time grower - bought some of Bert's roots early this spring and planted when the time came.  We've had a couple mild frosts recently and admittidly, I've been getting itchy so I dug them up.  Turns out I should waited, but that's how things go.  Into the fridge for a couple weeks til they go dormant.  Anyway........<br />
<br />
You show a root on the processing page that has several &quot;runners&quot; that are decent size.  My roots have lots of runners, but they're all about as big around as a pencil, and not extremely long.  My roots are also very &quot;hairy&quot; in appearance - with none of the fuzzy stuff growing out more than two or three inches from the plant.I went back out to the garden and worked up some more soil - found a few remnants but nothing large I missed.  <br />
<br />
The questions<br />
<br />
1: Was the ground I planted the root in too firm?<br />
2: The hairy stuff - if I can clean out the dirt can this be processed, or should it be discarded?<br />
3: Those pencil sized 4-6&quot; runners I've got - can they be replanted next year, or are they too small?<br />
4: If I decide to replant one of the original roots, should the 2&quot; stubs that the leaves grew from (one root has about 6 all in a row) be cut off, or should they be left on?<br />
5: will those 2&quot; stubs grow next spring if I cut them and plant seperately?<br />
6: Again if I plant an original root, what should I look for when determining which one too keep?<br />

Kinda long winded I know, and it wouldn't be that expensive to purchase new rootstock next year, but I'm afraid I wouldn't know I needed new rootstock until the old stuff rots away in the ground, so I'm attempting to get the education now.<br />

Just prepare like you would do regular mashed potatoes, but add horseradish.  We like placing them in a pyrex bowl and put butter on the top of them, cover and place in the oven for about 5 minutes after whipping them!<br />

2-3 TBSP of red wine vinegar or apple cider vinegar<br />

Spoon this over scored ham or pork roast that has roasted for about 1/2 hour.  Glaze again 1/2 hour later.  Creates a crunchy, zesty coating on your ham or roast.  Tasty!<br />

1 ½ tablespoons horseradish<br />
1 cup sour cream<br />
1 tablespoon tarragon vinegar<br />
1 tablespoon snipped chives<br />
1 tablespoon snipped dill<br />
1 tablespoon sugar<br />
¾ teaspoon salt<br />
¼ teaspoon paprika<br />
<br />
combine horseradish, sour cream and vinegar; mix until smooth. stir in rest of stuff and refrigerate at least ½ hour. serve over mixed greens, sliced tomatoes or cucumbers.]]></description>

2 cups canned beets, cubed<br />
¼ cup sugar<br />
2 tablespoons lemon juice<br />
1/8 teaspoon pepper<br />
¼ cup vinegar<br />
1 cup horseradish<br />

drain beets, reserving liquid. cut beets into cubes; add everything else and enough beet liquid to cover. refrigerate overnight. serve with any meat or fish.]]></description>
